JOB DESCRIPTION Position Title: Head Chef Responsible to: General Manager Responsible for: All Chef’s/Kitchen Porters Overall Scope of the Position: The Midland requires a talented and ambitious Head Chef to join our kitchen team. At The Midland we prepare all of our dishes fresh onsite and as such require a hands on chef, who is able to lead by example and develop as the business continues to grow. As Head of the kitchen operation, you will report directly to the General Manager, overseeing the preparation and cooking of food for hotel residents, functions and the bar. The successful Head Chef must be fully trained, have strong leadership and communication skills and have experience working in a quality establishment with excellent attention to detail. Working 5 out of 7 days, mixture of split shift and straight shifts. To maximise food revenue through the preparation and cooking of quality food dishes to the agreed standards. To ensure the food gross profit is maintained at 74% through effective ordering of food, minimal wastage and portion control. To ensure high levels of cleanliness within the kitchen in accordance with relevant legislation Candidate MUST have previous experience working in a similar role. Key Duties & Responsibilities • Initiate and oversee the production of all meals, and ensure high quality standards are adhered to at all times • Monitor Prep on a daily basis and make sure sufficiently stocked • To supervise activities from Chef’s and Kitchen porters • Ensure high levels of Health and Safety and food standards are always met • Recruiting, training and developing staff • Ensure High Standards of customer service are maintained at all times • Participate in Training programs when required to do so, as directed by Senior Management What we are Looking For • Must hold Basic Food & Hygiene Certificate • Previous Management Experience • Ability to Work Under Pressure • Positive “Can do” Attitude • Good Communication Skills • Good General Knowledge of Food and Trends General Terms Hours: 5 days over 7, at peak business times you may be required to work additional hours/days Salary: £TBC
